In Loving Memory of
John Constantine Thomas
April 1, 1937 – August 25, 2025
John Constantine Thomas, eighty-eight, of Rome, Georgia, passed away peacefully on Monday, August 25, 2025. His story began on April 1, 1937, in the village of Skoura, Greece, a place of stone houses, olive groves, and the sea’s patient song.
At the age of fourteen, John embarked on a journey that would define the rest of his life. With courage beyond his years, he left the soil of his homeland and crossed the ocean through Ellis Island, arriving in New York before settling in Saratoga. There, he learned the rhythms of a new language and culture while holding fast to the cadence of his Greek roots. He completed his schooling and, guided by the sense of duty that would mark his character, enlisted in the United States Army. He served three years on active duty and three more in the reserves.
At twenty-one, while stationed in Kansas City, Missouri, John proudly became a citizen of the country he had embraced as his own. After completing his service, he returned to New York and pursued training at Culinary School, where his skilled hands found new expression in the precision and artistry of cooking. His work carried him as far west as San Francisco’s Fisherman’s Wharf.
The great turning point of his life came in 1962, in New York City, when he wed his beloved Elaine. Their marriage endured for sixty-one faithful years until her passing in 2024, a bond woven with devotion and steadiness. In 1977, John and Elaine carried their hopes and labors southward, settling in Rome, Georgia, with their growing family to pursue business ventures together. There, John found not only work but also a lasting sense of belonging. In 1978, he opened The Country Gentleman Restaurant, which he proudly owned and operated with Elaine for more than thirty-five years, becoming a cherished part of the Rome community. He was also a devoted member of Holy Transfiguration Greek Orthodox Church, where his faith remained a source of strength and guidance throughout his life.
John is preceded in death by Elaine, the wife of his heart, and by his treasured son, Dean Thomas. He is survived by his daughter, Elyssa Williams and her husband Barry; his grandchildren, Nicholas Williams and his wife Tori, Zachary Williams and his wife Bailey, Matthew Williams, Olivia Thomas, Emily Thomas, and Christopher Thomas; and his great-grandchild, Palmer Williams, who carries forward his legacy. Across the sea, his sister Fotini of Athens, Greece, remembers him with the tenderness only a sister can hold.
Those who knew John will remember not only his life’s accomplishments but also the simple gifts of his presence, and the stories he told with gentle gravity, his deep affection for family, and his laughter that bridged generations. His was the journey of a boy from Greece who became a man of America, embodying the strength of both places all his life.
A Celebration of Life Service will be planned for a later date.
